The GS-95 is made for harder cheeses than the GS-10 as it has a shorter stumpier blade and is good for use with cheddars and parmesan. It is still a universal cheese knife and can be used for any kind of cheese. The holes on the blade make it easier to seperate the cheese from the knife and the two prongs on the front of the blade can be used for serving.
